0 Spike Oatmeal Journey


If you follow along on my Instagram account, @typeonday, then you likely know I have been on quite the journey to figure out how to eat oatmeal with NO blood sugar spike. I love my eggs but sometimes you just have to switch it up...and not have it send you on the blood sugar roller coaster if you know what I mean ;)








Well I FINALLY figured out what works for me. This results in no post meal spike (for me). Remember, every person reacts differently to insulin and carbs... so play around with it and see what works for you!!


Night before:


•Soak overnight oats overnight (1-1 ratio nut milk to oats)

•Prepare chia seed pudding (3/4 cup milk : 3 tbsp chia ish but it really depends how thick you like it)


Morning of:

•Give insulin 15 min before eating


•Prepare bowl full of overnight oats, chia seed pudding, almond butter, any other fun toppings you’d like!! (I did berries and pecans)

*chia seeds are key here for sustained blood sugar!!


•I like mine sweetened with Swoon simple syrup instead of honey for no blood sugar spike!!


The flavor is magical and such a nice way to switch things up. Enjoy!!
